Mirotec completed a project for Brest Meat Processing Plant: a Sausage Portioner Weight & Cut system for automatic cutting of sausage logs before packaging.
The machine cuts sausage logs at 45°, 70° or 90°, helping prepare clean and visually consistent portions for retail packaging. The solution was integrated into the customer’s packaging line to reduce manual cutting, improve hygiene and make product loading more stable.
This type of equipment is suitable for sausage producers who need accurate weight-based cutting, controlled product presentation and reliable integration with thermoformers or tray packaging lines.
Project Task
The customer needed to automate sausage log cutting and improve product preparation before packaging.
The project focused on several practical tasks:

Implemented Solution
Mirotec supplied and integrated a Sausage Portioner Weight & Cut system for automated sausage cutting.
The machine was connected with a signal unit, label applicator and thermoformer. The system was also synchronized with a loading unit for two-chamber trays, allowing the customer to organize cutting, transfer and packaging preparation as one connected process.
The equipment supports accurate cutting geometry and stable product handling, which helps keep the sausage halves suitable for further automatic loading and packaging.
Safe Cutting of Clipped Sausage Logs
One of the key requirements was safe cutting of sausage logs with clips, without damaging the casing.
The machine is designed to hold the product in a stable position during cutting. This helps reduce the risk of casing damage and keeps the product appearance clean before packaging.
For producers working with different sausage formats, this is important because one machine can support several production scenarios: boiled sausages, boiled-smoked products, clipped logs and unclipped logs.

Portion Accuracy and Product Savings
The Sausage Portioner Weight & Cut system provides accurate cutting with a deviation of approximately ±1% of the sausage log weight.
The reject system helps reduce unnecessary product loss. If one half of the sausage log does not meet the required weight range, the machine can reject only the non-standard half while keeping the acceptable half for packaging.
This helps preserve more sellable product compared with processes where the full sausage log is rejected after inaccurate cutting.
